How to Dine Like Old Money Without Behaving Like New Money

One does not need to know the price of the tasting menu. One does need to know when it begins.

Reserve first and read the conditions

Excellent Australian restaurants may sell out weeks ahead and take deposits or card guarantees. Check the official booking page for the current menu format, cancellation deadline, dietary policy and dress expectations. A chef's table, counter seat and full dining room can offer different experiences; select the one you actually want.

Know what a tasting menu is

A tasting menu is a curated progression of dishes, often with optional beverage pairings. Dietary substitutions are sometimes possible and sometimes not. Discuss allergies and intolerances when booking, not after the third course arrives. If you dislike an entire category of ingredients, check how fixed the menu is before paying a deposit.

Dress for the room, not a photograph

Read the venue's own policy. Many modern fine-dining rooms favour smart but relaxed clothing, while others maintain specific standards. Clean, considered clothes and attentive manners typically count for more than performing wealth. Some people arrive dressed as a hedge fund. The staff have seen enough of those.

Ordering and drinking

Ask for advice without pretence. A sensible sommelier can suggest excellent wines at a requested budget. It is perfectly normal to ask about non-alcoholic pairings, sparkling water costs or the approximate length of service. Alcohol isn't required to appreciate hospitality, and choosing not to drink is not a breach of etiquette.

Behaviour that never goes out of style

Arrive on time, respect staff, avoid flash photography, allow other tables to enjoy their evening and treat the bill as your own responsibility. Australian tipping is voluntary rather than mandatory; check the bill for any service or public-holiday surcharge. If there is a mistake, raise it courteously and promptly rather than performing outrage for an audience.

Which room to choose

Select a place for a particular reason: architecture at Bennelong, a high-rise tasting menu at Vue de monde, ingredients and views at Wildflower, or immersive botanical dining at Restaurant Botanic. Book through the restaurant's own website where practical and verify any policies before you go. Wealth is not a substitute for arriving with curiosity.
