THE FEAST / THE HOUSE SPECIAL
Deeply browned beef. A slow, concentrated ragù. Silky béchamel and corners worth fighting over. Rich by technique, not by shopping receipt.
Development recipe: this draft has not yet been kitchen-tested. Pasta brands vary; follow your packet’s preparation instructions and check tenderness before serving.

Dietary note: choose labelled gluten-free sauces, stock, flour and pasta, and lactose-free milk and cheese. Lactose-free dairy still contains milk proteins. Omit the optional hard cheese unless confirmed suitable.
Pat the mince dry. Heat a wide heavy pan over medium-high heat with half the oil. Brown the beef in 2–3 batches, spreading it out and leaving it undisturbed for 2–3 minutes before turning. Transfer each deeply browned batch to a bowl. Do not crowd the pan: grey, steamed mince is not the brief.
Reduce the heat to medium-low. Add the remaining oil, onion, carrot and celery with a pinch of salt. Cook for 12–15 minutes, stirring regularly, until very soft and lightly golden. Add the garlic for 30 seconds, then the tomato paste; stir for 2–3 minutes until it darkens to brick red.
Pour in the stock, scraping every browned bit from the base. Return the beef and its juices. Stir in passata, crushed tomatoes, Worcestershire sauce and bay leaves. Bring to a gentle simmer. Cook partly uncovered on low for 60–75 minutes, stirring occasionally, until thick enough to mound on a spoon. Add a splash of water only if catching. Remove bay leaves; season with salt and pepper. The sauce should taste deeply savoury, not watery or sweet.
Melt the dairy-free spread in a saucepan over medium-low heat. Whisk in the gluten-free flour and cook for 2 minutes without browning. Gradually whisk in the milk, starting with small additions to prevent lumps. Simmer gently for 6–8 minutes until smooth, glossy and pourable but thick enough to coat a spoon. Add a little nutmeg if tolerated, salt and pepper. Stir in half the grated cheese, if using.
Heat oven to 180°C fan-forced (200°C conventional). Use a 23 × 33 cm baking dish. Spread a thin layer of ragù on the base. Add a single layer of gluten-free lasagne sheets, then one-third of the remaining ragù and one-quarter of the béchamel. Repeat to make three pasta layers, checking packet directions for any pre-cooking requirement. Finish with the remaining béchamel and cheese, spreading right to the corners. If the sheets need extra moisture, loosen the ragù slightly with water before assembling.
Bake on a tray for 40–50 minutes until bubbling through and deeply browned on top; loosely cover with foil if colouring too fast. Check a knife passes easily through the pasta. For crisp corners, uncover for the final 10 minutes. Rest uncovered for 20–25 minutes before cutting into 8 portions: this is how you get clean layers instead of lasagne soup.
Ricotta and truffle upgrade: For a richer version, dot 250 g lactose-free ricotta (if available) between the pasta layers and swirl 1–2 tablespoons of truffle salsa into the final béchamel layer. Check the truffle salsa is gluten-free and suitable for your dietary needs. Start with less: truffle should perfume the lasagne, not overwhelm it.
Finish like a restaurant: Rest the baked lasagne before cutting, then scatter with chopped flat-leaf parsley and a little freshly grated lactose-free hard cheese, if tolerated. Fresh truffle is entirely optional.
These optional variations have not yet been kitchen-tested. They are not required for the base recipe.
THE KIT / BUILD YOUR LASAGNE
