What you shall require
- 1.1–1.3 kg centre-cut beef fillet, evenly trimmed
- 600 g Swiss brown mushrooms, finely chopped
- 2 large shallots, minced
- 2 tbsp olive oil and 30 g butter or lactose-free alternative
- 2 tsp Dijon mustard
- 8–10 thin slices prosciutto
- 600 g gluten-free puff pastry suitable for wrapping, or conventional butter puff pastry
- 1 egg beaten with 1 tbsp water
- Salt, pepper and thyme
How it is done
- Pat the beef thoroughly dry, season generously, and sear in a very hot pan with oil until coloured on every side. Cool completely, then brush lightly with Dijon.
- Cook finely chopped mushrooms and shallots in a wide pan with butter and thyme until their moisture has evaporated completely, roughly 18–25 minutes. Cool fully; a wet duxelles will ruin even aristocratic pastry.
- Arrange overlapping prosciutto on cling film, spread the cold mushroom mixture evenly and roll the beef tightly inside. Refrigerate until firm, at least 30 minutes.
- Roll the chilled pastry into a rectangle large enough to wrap the beef without thick overlapping seams. Remove the cling film, wrap the beef in pastry, seal edges underneath and chill for 20 minutes.
- Heat oven to 210°C conventional or 190°C fan-forced. Brush the pastry with egg, score lightly without piercing and roast on a lined tray until golden and the thickest part of the beef reaches your preferred safe temperature, checking with a probe thermometer.
- Rest 12–15 minutes before cutting with a serrated knife. Serve with a reduced red-wine pan sauce prepared separately and seasonal greens.
The household notes
Choose an even-diameter centre cut: it cooks more consistently than a tapered fillet. A temperature probe is more useful than any amount of inherited confidence.
Gluten-free puff pastry behaves differently by brand and may need patching; verify the individual pack instructions. For a lactose-free version choose suitable pastry and fat.
